We produce cheese and other products in harmony with the environment where livestock herd free range, which gives us the opportunity to make a difference with our special dairy products.
We come from three generations of artisanal cheeses makers in the Agro Pontino area in southern Lazio in Italy producing our special family recipes mozzarella and other cheese in the region where our buffalo and other animals range on over 50 acres of rich pasture.
Italian legend tells us that in the Roman times a master cheese maker accidently dropped a block of curd in a pot of hot water.
The cheese maker tried to salvage the curd by shaping it into a ball and the first mozzarella cheese was made.
As with all good things, excellent cheese takes time to be made and true artisanal mozzarella is a product that has to go through multiple production phases, which requires many years of experience and knowledge.
What makes superior fresh mozzarella?
A good, fresh mozzarella is distinguished by genuine fresh 100% milk, its shiny porcelain white colour and its compact elasticity.
When cut, layers of cheese release drops of intense aromatic sweet milk, leaving an aftertaste of cream and hazelnut.
The curd is then kneaded by hand to achieve the correct consistency of the mozzarella.
The master cheese makers stir the curd and cut it into snow flakes in large wooden tubs, slowly adding hot water into the smooth, shiny paste.
The process begins when our cows get milked every sunrise, producing fresh porcelain white milk.
Immediately afterwards, the cow's milk goes through a rigorous quality control procedure in our lab.
The milk is flash pasteurised for seconds, just enough to allow the fresh hint to remain intact with its original taste.
Natural probiotics and rennet are then added allowing milk to become curd.
The cheese maker creates each mozzarella ball in the traditional shape by hand, one at a time.
At this point all of the handmade mozzarella balls are then put into there milky liquid.
